halloumi sandwich, caramelised onions and apple

Sandwiches are one of my favourite choice for weekdays lunch, like so many people I guess, even at home. I love that you can get creative with whatever's left in the fridge to make yourself a delicious, healthy, filling meal in a snap.

I have been enjoying halloumi a lot lately, it's a delicious alternative to meat, not that I am a vegetarian but I'm not that big on meat. So today's recipe is this very simple apple, onions and halloumi sandwich. Grilled halloumi is a bit salty, so it really calls for some sweetness.

Ingredients for one sandwich

2 slices of slightly toasted Rye bread (super healthy, and great for a flat stomach)
2 or 3 slices of halloumi cheese
1/2 thinly sliced onion
1/2 small apple, also thinly sliced
A few leaves of salad
Mustard

Caramelise the onion with a little bit of sugar and a dash of vinegar (balsamic is great for that), for about 5 min. Grill the cheese in a greaseproof pan without for 2-3 min, turning regularly. Spread a tiny bit of mustard on both slice of bread, then layer the salad, onions, apple and the cheese.

It doesn't get much easier than that. Plus the bread and the protein in the cheese make it really filling, so thumbs up for a wonderfully healthy meal !
